Pork Loin Steaks in Cider

Ingredients

2  Pork Loin Steaks
2  Shallots
1 Sprig of Thyme
Glass of Cider
1 Cooking Apple

Method

Pan fry the Pork Steaks
Place in oven for 20-25 minutes, then take them out and let them rest for 5 minutes.
In a pan, add and fry in olive oil the diced shallots, and let them sweat for 1-2 minutes.
Add the cider and thyme.
Reduce down to a syrup.
Pour over the Chops
Serve with Potato and Parsnip Mash.

Pork Chops

Well this one couldn’t be easier. As usual, you can make it as complicated as you like, so here is a basic recipe with some suggestions.

1 pork chop per person, not too lean (the chops, not the person).
Sage – just beginning to grow again now, so fresh if you have it in your garden is best. Sage has quite a pungent taste, so two decent-sized leaves per chop should be enough.
Cider and cider (or balsamic) vinegar.
Cream or crème fraiche.

Diced Pork Recipe

I cooked this for my wife last week – it took me twenty minutes from start to finish. She liked it so much she finished off the washing-up!

Serves 2 people

  • 6-8oz (170-227g) diced pork
  • 1 chopped leek
  • 2oz (50g) chopped mushrooms
  • 2oz. cream, single or double
  • Grainy Mustard
  • Vegetable oil
  • ½ cup of wine or stock (chicken or vegetable)
  • Salt & Pepper
  • Knob of butter
  • Rice
  • Green vegetable
